SUPERBOWL! It's the Jets and the Vikings plus a whole lot of great food.



Yeah, so I barely know who is playing but that is not why I love the Superbowl. I love it for the food and the friends. We have a high def TV that is so damn big that when Jay Leno walks out to do his monologue it is like he is actually standing in our living room. We live in a pretty small condo and Ty's tv takes up most of one wall - he loves his tv and his FRIENDS love Ty's tv... its actually amusing.


We dont go anywhere to watch the Superbowl. Ty LOVES watching the Superbowl game from HIS chair holding HIS remote with HIS friends and HIS wife making and serving the best food. I like it too... as Superbowl Sunday is always a great day in our home. Good fun!

The other day, at the office I asked our friend Bing if he was going to be able to join us on Sunday. He looked at me with a sad face and said that he WOULD love to because I always have fantastic food, but they already had committed to go somewhere else. He was really bummed - which is a great compliment from a friend who himself throws wonderful parties and is a superb cook!

So... how to meld bariatric and Superbowl food? Simple - I make dishes that are just as good when eaten on a plate with a fork as they are dipped with a big ole corn chip or potato chip. At nearly ten years post op I can easily live without chips... its just where I live.


Here is what I am planning to fix... kickoff is 6:25 pm... have a blast.

Roasted Hot Wings
Hot Artichoke Spread with Pita Chips
Chipotle Shrimp and Avocado Salad
Waffle Chips and Homemade Blue Cheese Dip
Mini Crab Cakes
Sliced Pepperoni and Smoked Cheddar plate with crackers
Bacon Wrapped Roasted Jalapenos - THE BEST APPETIZER EVER!

Brownies (NOT sugar free)
Lemon Bars (sugar free - Before & After book recipe)

Mango Margariata with Chipotle salt rims (sugar free Zilch and regular versions)
BEER!



Bacon Wrapped Roasted Jalapenos

18 medium fresh jalapeno peppers
8 ounces cream cheese, room temperature
1 cup shredded sharp cheddar cheese
2 teaspoons prepared horseradish
3 green onions, very finely minced
12 ounces thin-sliced bacon

Cut each pepper in half and scoop out all of the seeds and membranes with a spoon.

Blend cream cheese, cheddar, horseradish, and green onion until smooth. Divide the filling among the 18 peppers filling one half of each pepper and topping with the other half to enclose it.

Wrap a slice of bacon slightly overlapping to cover the peppers completely. Secure the ends with a small bamboo skewer or toothpick and arrange on baking sheet (on a wire rack if you have one). Can be refrigerated at this point until ready to cook.

Preheat oven to 375 degrees. Roast the peppers 35 to 40 minutes, until bacon is browned and jalapenos are softened. Serve hot.

Makes 18 large appetizers.




I do believe we are cheering for the Colts because we like Eli Manning! See, I really do know who is playing.
